Try search 'language' in Roundcube default config file: /opt/www/roundcubemail/config/defaults.inc.php
Then copy the setting to /opt/www/roundcubemail/config/config.inc.php and update it to the language you want to use.

Do not modify 'defaults.inc.php', it's ignored during Roundcube upgrade.
