I followed all the instructions on the upgrade page to go from 0.8.1 -> 0.8.2 which was successful. I just had some questions regarding the package upgrades such as roundcube, iredapd, etc.

If I run the latest iredmail script and run it, will it upgrade these packages? Will this overwrite existing ldap database and mail accounts?

I am trying to see how to obtain the roundcube upgrade and other package upgrades without having to manually upgrade them..

Do NOT run iRedMail installer to upgrade current system. it doesn't work, and will mess up.
As described on document page and upgrade tutorial:

Usually, upgrading iRedMail is just updating some config files to achieve new features or fix bugs, you do NOT need to download the latest iRedMail and run the script.

IMPORTANT NOTE: Upgrades are only supported from one release to the release immediately following it. Do not skip releases.
