Is white listing working in iRedMail?, how can I add a new address to the white list?

You can add whitelist senders/domains/IPs with iRedAdmin-Pro. Screenshot attached for your reference.
If you don't have iRedAdmin-Pro, you can add whitelist via MySQL command line or phpMyAdmin too. Reference:

I have iRedAdmin-Pro v1.3.1 but my Admin Panel is different. I have not the 'Whitelist' option. See screenshot attached.

You're running Ubuntu 11.10 with Policyd-2, but iRedAdmin-Pro doesn't support Policyd-2 yet, so it must be disabled in iRedAdmin config file settings.ini.
Please refer to Policyd official site to get document and add whitelist manually:

Will achieve this feature soon in iRedAdmin-Pro.
