I changed the password for mysql but now i can't accesss roundcube.

What's the whole procudure to set the new mysql root password inside iredmail cfg ?
What cfg files i need to change ?

Sorry, What do you exactly mean "cannot access roundcube"?

To change MySQL root password, there's no need to update config files of mail server related components. No one uses MySQL root password.

Roundcube will connect to MySQL server as MySQL user "roundcube", did you change it? If so, please update Roundcube config file also. It should be roundcubemail/config/db.inc.php.
