are the virtual domains just for email or can I set up the virtual doamins as well?

I have the emails working but need to get the per domail websites working as well... Do the virtual domains have a document root?

Do the virtual domains have a document root?

No.

You can hard-code it in Apache, or try to fingure out whether Apache supports reading per-domain DocumentRoot from LDAP/MySQL.
