is there a way to enable "enabled_services:self-service" globally or do we have to activate this per domain manually (which is quite a buch of domains)

and to add to my own question, is there also a global way to disable the "SOGo Groupware" feature?
(at least as long as we haven't added it to our iRedMail-system)

No. You may want to use iRedAdmin-Pro RESTful API to make it easier.

If you don't have SOGo running on your server at all, then you don't need to worry about the "SOGo groupware" feature in iRedAdmin-Pro.
