I've recently installed iredmail on my Ubuntu server and as i've used it i've discovered some things that I'd like to change but I have no idea how to go about doing so. My main concern is setting formatted text as default when sending mail. Another thing is to automatically download pictures in incoming mail. These don't break the experience but they're little things that I'd rather have to make using iredmail a little easier.

Those things don't really have anything to do with iReadMail. Those options are set in your email client (like Outlook or Thunderbird) or in SoGo/Roundcubemail.
