I have multiple IPs on my server and I am hosting multiple domains. How can I make sure that email sent from a specific domain is being sent through a specific IP?

BTW, curious, why do you want to send through a specific IP?

Thank you for that. Some of our email recipients have firewalls that are blocking our emails because our domains do not have a PTR record associated with the server. So I am thinking to get 1 IP for each domain so they all have valid PTR records. Is this the right way to do it?

Yes you can do it this way.
