By default, does iRedMail train itself about spam using the contents of users' Junk folders?

If not, how to enable this?

Asking because some spam recurs from different senders, and with patterns that do not lend themselves easily to postfix header_checks and body_checks.

Great, thanks! I will check this out.

The instructions mention a plugin for Roundcube. Does junk classification _only_ work in Roundcube, or is there way to classify junk mail using third-party mail clients such as Thunderbird?

You can also try Dovecot "antispam" plugin, it's a server side feature and not rely on MUA or webmail.

Do a quick search with Google (with "site:www.iredmail.org/forum/) should give you some posts with sample working dovecot settings.
