Could we setting up iRedmail for SMTP gateway, Anti-Spam, Anti-Virus delay for MS Exchange 2003?

Of course yes.
What it does is anti-spam & anti-virus and then relay to Exchange.

I mean, making the iRedMail to mail Gateway(SMTP) with anti-spam and anti-virus for Ms Exchange.

just added

in main.cf
.
relay_domains = $mydestination domain1.com
transport_maps = hash:/etc/postfix/transport
.
in transport

domain1.com smtp:mail.domain1.com

then run

#postmap transport
