you should update MX type DNS records to point to new server first, make sure all new mail traffic goes to new server, then copy emails in Postfix queue from old server to new server. Run 'postqueue -f' to flush the queue to redeliver queued emails.

I see directory queue /var/spool/postfix/. But they have many sub directory active, bounce, corrupt, defer, deferred, etc, flush, hold, incoming, lib, lib64, maildrop, pid, private, public, saved, trace.
Do I need copy all sub directory in directory queue /var/spool/postfix/ from old server to new server ?

Thanks.

5 sub-directories mentioned in section "MAIL QUEUES" should be enough:
http://www.postfix.org/qmgr.8.html
