Where on this site can I see what version of each package is install with each version of iRedMail ?

It's whatever version of the package is available in your distro's packages

So if I have SOGo Version 2.2.17a
iRedMail v0.9.0 will still work, yes ?

and posfix 3.0 ?

etc.......

but will it use the news features in these software/packages ?

Iredmail is designed to be installed on fresh systems, not one with anything installed

After you install iredmail you can upgrade the packages to whatever version you want as long as their configuration scheme doesn't change

iRedMail installs packages available FROM official software repo (apt/yum/ports tree/...) provided by Linux/BSD distribution venders.
